Taco rice and blue cake

To finish off some of the leftovers from yesterday. I've just made salsa and put the rice cooker on, and paused to look up recipes. I am surprised and interested to find that taco rice is a popular Okinawan dish, consisting of taco meat on lettuce and rice, and topped with salsa.

I doubt the blue cake is Japanese or Okinawan at all.

You need to check out this blog. She's a Catholic mom of a 3.5 year old, a 2 year old and infant twin girls. One of whom is named Elizabeth. I dunno, maybe you have something in common?
